Tassajara Nutloaf

Serves: 6

Ingredients

1 cup brown rice – cooked
1 cup chopped walnuts
1/3 cup cashews
¼ cup diced mushrooms
1 large onion – diced 
½ pound cheddar cheese – grated
2 cloves garlic – minced 
2 eggs
½ cup cottage cheese
1 teaspoon dried thyme
1 teaspoon dried savory
1 teaspoon dried marjoram
½ teaspoon dried sage
½ teaspoon salt
1 tablespoon butter 

Preparation

Preheat oven to 325 degrees F.
  1. Sauté onions, garlic and mushrooms in butter.
  2. Mix all ingredients. Spread evenly into oiled roasting pan.
  3. Bake 40–60 minutes until browned on top, but not too dark. Rotate pan occasionally to promote even cooking.
