Roman Salad

Ingredients

1/2 pound tomatoes – chopped
1/4 pound green peppers  – chopped in 1" pieces
1 pound red onion  – halved and sliced
1/2 cup kalamata black olives – whole or chopped
4 sticks celery  – chopped in 1" pieces
1 tablespoon capers  –  rinsed
1/4 bunch  basil  – chopped
2 tablespoons olive oil
1/2 clove  garlic – minced
1/16 tablespoon  dried basil
1/16 teaspoon  salt and pepper

Preparation

  1. Mix oil, garlic, dried basil, salt and pepper. 

  2. Mix other ingredients in a large bowl.

  3. Add oil mixture to vegetables and stir gently. Let sit for at least 15 minutes.

  4. Toss again just before serving.
