Ingredients
Serves 6
1 cup brown rice – cooked
1 cup chopped walnuts
1/3 cup cashews
¼ cup diced mushrooms
1 large onion – diced
½ pound cheddar cheese – grated
2 cloves garlic – minced
2 eggs
½ cup cottage cheese
1 teaspoon dried thyme
1 teaspoon dried savory
1 teaspoon dried marjoram
½ teaspoon dried sage
½ teaspoon salt
1 tablespoon butter
Preparation
- Preheat oven to 325 degrees F.
- Sauté onions, garlic and mushrooms in butter.
- Mix all ingredients. Spread evenly into oiled roasting pan.
- Bake 40–60 minutes until browned on top, but not too dark. Rotate pan occasionally to promote even cooking.
