Ingredients
Serves 8
4 spaghetti squash, each cut in half
Sauce:
5 pounds tomatoes, fresh
2 ⅔ Tablespoons olive oil
2 ⅔ Tablespoons garlic, minced
6 ⅔ wt ounces onion, diced
⅜ cup veggie broth, bouillon or fresh
⅔ each bay leaf
⅓ bunch basil, fresh, chopped
½ teaspoon fennel
1 ½ teaspoons basil, dry
1 ½ teaspoons oregano, dry
⅛ bunch parsley, fresh, chopped
salt, to taste
pepper, to taste
Tofu Burger:
2 pounds tofu, extra firm, crumbled
1 ⅓ Tablespoons sweet paprika
2 teaspoons smoked paprika
2 teaspoons onion, powder
2 teaspoons garlic, powder
1 teaspoon black pepper
2 teaspoons salt
Preparation

Roasting Tomatoes: Core and quarter tomatoes. Place on a sheet pan and cover in olive oil. Sprinkle with sea salt. Roast in the oven at 375 degrees for 20-30 minutes. Peel skins after roasting.

Making Sauce: While tomatoes are roasting, chop onions and saute in a pot until onions are translucent. Add garlic and saute for another few minutes. Add fennel seeds, oregano, dry basil, bay leaf, salt, and pepper. Saute for an additional minute. Add veggie broth. When tomatoes are done, add them to the pot and simmer sauce for at least an hour. When done, bermix but don’t puree. Be sure to leave chunks of tomato.

Prep & Roast Squash: Cut squash in half and de-seed (this can be done the night before). Place on sheet pans and generously brush the squash with olive oil. Sprinkle with salt and pepper. Roast in the oven at 350 degree for 45 – 60 minutes, until done.
- Tofu Burger*: The tofu burger can be made anytime and frozen until ready for use. Create spice mix by adding sweet paprika, smoked paprika, onion powder, garlic powder, black pepper and salt to a bowl and mix. Crumble tofu into a bowl and slowly add spices only using 1½ teaspoons of seasoning per pound of tofu to begin and add more to taste. Set aside extra spice mix for later use. Place on a well oiled sheet pan, mix the tofu around in the oil so all of the tofu is coated. Bake at 400 degrees for 20-30 minutes.
To serve, use the squash as a bowl for the sauce and finish with toppings such as pesto and feta cheese.
